6 large egg yolks
1/2 to 2/3 cup evaporate cane juice (or your sweetener of choice)
pinch salt
1 cup heavy cream, chilled
1 Tablespoon rosewater
Juice of 1 lemon
1 cup blackberries
4 heaping tablespoons blackberry jam
